Being a main collective hub on the Gold Coast for people to come and relax and unwind with an ice cold beer or an exotic cocktail. The Collective features five restaurants, one main bar, a rooftop bar and a friendly and luxurious dining experience in which you can indulge in many delicious types of food from an Italian primavera pizza to a Japanese ramen bowl!
We chat with owner/partner and general manager, Jeremy Davidson to find out his inspirations for starting The Collective.
1. How did The Collective begin?
The story began whilst travelling the world and being inspired by the pinchos bars in Madrid and beach bars in Bali. We loved the idea of being able to try lots of different cuisines and variety in one dining experience. The idea of multiple vendors generally presents itself as a marketta or food court, neither of these philosophies are ideal for a quality dining experience as they both lack the finesse of table service. Really we just wanted to bring the great outdoor European style of eating, drinking and socialising here, obviously working within the parameters of what we can do here in Australia.
2. Where do you draw your daily inspiration from?
Its a family owned and run business so what inspires us is each other and working hard to create a memorable dining experience for familys and friends to enjoy.
3. What’s your favourite current drink/food item?
Portugese breakfast cocktail! Comes in a fine china tea cup! Very cute
Loving the truffle gnocchi for winter! Hearty and delicious!
4. Any exciting / new events coming up in the near future?
We have just purchased a food trailer which will give us the ability to carry The Collective experience to your front door and help you celebrate your special occasion. We have also just introduced electronic menus which will add another dimension to our customers dining experience.
